Cheese Chips, Pepperoni Chips, & Mustard Dip

A group of friends and I get together once a month or so and hang out, play games, and of course…we eat. Lots of food. Some of us tend to be a bit more conscientious of the food we eat, some of us not so much. All things in moderation though, right?

One of my best friends is currently changing her lifestyle to a Keto way of life, so we’re always on the hunt for tasty and perfectly easy dishes. Anything with as little prep as possible is great. One of the quickest things to make and serve are Pepperoni Chips, Cheese Chips, and this fan-freakin-tastic Mustard Dip. I’m telling you, once you try these out, they will be a staple in your Keto recipe collection!

These three recipes today are super quick, super easy, and super delicious. They’re great for small gatherings and even better for snacks on the go! The prep is minimal, the ingredients even less, but the taste? Out of this world! I’m especially fond of the cheese chips.

One of the ways to ensure that you get the best results is to use insulated cookie sheets, I prefer these.

One of the key ingredients to delicious food is presentation. When I have gatherings,  I enjoy putting dips and sauces into these Ramekin dishes. Just place the dip in those cute dishes, and set them on a fun little platter with the Pepperoni & Cheese Chips, and voila! Instant party!

Now, onto the good stuff.

Cheese Chips

One of the MOST important things to remember is that you MUST use parchment paper. Not wax paper, not aluminum foil, it has to be parchment paper. Something about the heat and the parchment makes it have JUST the right texture. This is also the case for the pepperoni chips.

So first, preheat the oven to 350 degrees. Make sure it’s completely preheated (typically takes 10 to 20 minutes, depending on your oven) before you place the food in the oven to get the most evenly baked chips.

While the oven is heating,  mix together the cheese, eggs and ranch seasoning  –  you’re going to want to mix it really well, getting a good “wet” coating all over everything.

Once that’s done you’ll spoon a tablespoon of the mixture onto the parchment paper, leaving some room in between mounds, because it’s cheese it will melt and spread a bit.

Bake until the edges are a lovely golden brown & the cheese is completely melted. Then its time for the real challenge:  waiting until they are cool enough to eat!  It only takes a few minutes but I never manage to wait long enough. They are just to dang good!

Servings 4

  • 6 cups shredded cheese
  • 2 eggs
  • 1 1/2 tsp ranch seasoning

  1. Preheat oven to 350 degrees. Mix together cheese, eggs, and ranch seasoning (use our Ranch Seasoning & Avocado Ranch Dip Mix recipe)

  2. Spoon mix onto a baking sheet with parchment paper, about a tbsp each. Press each pile down to flatten it out a little.
  3. Bake for 10-12 minutes. Until cheese is melted.

Pepperoni Chips

Now, this is probably my favorite Keto Snack recipe because of how unbelievably easy it is.

You’ll want to have the oven set to 300 degrees at this point, and remember PARCHMENT PAPER! Place the pepperoni’s next to one another on the baking sheet, they can touch this time, it’s ok. Bake for 12-15 minutes. Be forewarned, the grease in these makes the pepperonis have a dance party. They will move all over the place. Make sure to use a cookie sheet with a rim.

Once done, you’ll want to put these puppies on a plate w/a paper towel to soak up that grease.

Pepperoni Chips

  1. Preheat oven to 300 degrees. Place pepperoni on a baking sheet lined with parchment paper.

  2. Bake pepperoni for 12-15 minutes. Place warm chips on a paper towel to cool, which will allow the grease to drain.

Mustard Dip

I love dips. Like, it’s a problem. This Mustard Dip is no exception to the rule, either.

This recipe calls for Primal Avocado Mayo, which you may have noticed is a favorite around here. We use it in lots of Paleo and Keto recipes such as our Jalapeno Cream Sauce and Avocado Ranch Dip. sIt also calls for mustard (hence the name), and I’m a total sucker for a good stone ground mustard (this is my favorite!).

Just mix all the ingredients together in a bowl, whisking together with a fork, and mwah! Perfection!
