This week we’ve had a few leftover bananas ripening in the kitchen. Just the sight of them brings on the the strong urge to go get busy baking some bread. I don’t know about you, but I do not need any tempting, gluten filled, banana bread.
And so I bring you Banana Nut Bites. These sweet bites are great for those pesky banana bread cravings. They are also my favorite kind of recipe, easy-peasy.

So, grab a food processor and throw in a ripe banana, cashews, walnuts, gluten free oats, and vanilla. Or if you aren’t crazy about walnuts, you can use pecans instead like I did. Blend ’em up until the mixture is nice and smooth. Use a cookie scoop or a tablespoon to place piles onto a cookie sheet or spoon mix into a fun silicone mold. Freeze for at least an hour before you move them to an airtight container.
Banana Nut Bites
Easy No-Bake Treat, Paleo Diet Friendly, Dairy Free, Gluten Free
- 1 ripe banana
- 1/3 cup cashews
- 1/3 cup walnuts or pecans
- 2/3 cup gluten free rolled oats
- 1 tsp vanilla
Place all ingredients in a food processor. Blend until almost smooth.
Use a tablespoon or a cookie scoop to spoon mixture onto a cookie sheet. Freeze until solid before transferring to an airtight container.
